This recipe book is all the recipes I was shown and given by a group of lovely church ladies when I went to volunteer after a hurricane for clean up. This is my understanding of Cajun. The Cajun people are descendants of French Canadians that were exiled from their lands and settled in Louisiana. They learned about local ingredients and experimented with herbs and spices. This created the first truly "American" cuisine. But honestly, the best way to experience Cajun cuisine is to try it! Bon Appétit!
